Relevant aspects for the design of an electronic tongue

The demands of the food industry are growing exponentially, so to compete with the quality of products is becoming a major issue for small and large businesses, for this purpose are used tasting panels but present a lot of constraints, this has led to looking for new alternatives that complement this analysis. One of the newest is the design of electronic devices that emulate the taste sense called electronic tongues that reproduce artificially the taste sensation, this process is achieved by machine learning that related the chemical-analytical information on the different flavors, information tasting panels and electrochemical characterization through the discovery of regularities among the data using computational algorithms and ends in the decision making like the data classification. The present article has as purpose to make an extensive review on the aspects to consider in the design of an electronic tongue and industrial importance.Downloads
